
Beth & Merritt’s 5-minute meatless loaf, green peas, mashed potatoes, & a glass of iced tea.(Beth Clifton collage)
This is what’s for dinner when you have only five minutes to put a meal together & have something else to do that will take an hour & absolutely must get done before you can take time to eat.
Serves 6-8, goes well with any vegetables, & is good as a leftover.
Preheat oven to 350 Fahrenheit
Mix together:
One and a half pounds of soft tofu
Half cup of ketchup

Half cup of soy sauce
Two tablespoons of mustard
Half cup of chopped parsley
Cup of grated carrot
Half teaspoon of black pepper
One medium-sized diced onion or half cup of minced dried onion
Quarter teaspoon of garlic powder or minced garlic
Half cup of crushed corn flakes
Half cup of rolled oats
Half cup of bread crumbs (seasoned or unseasoned, as you prefer)

Mix well. Pour into an oiled loaf pan.
Bake for one hour.
Spread a light layer of ketchup over loaf.
Allow 10-15 minutes of cooling time before serving.
